Nobody washes their hands more than a line cook. Add heat, steam, citrus, salt, onion, and a sanitizer bucket, and by the end of a double the backs of the hands are tight and the cuticles are shredded.
Why kitchen hands take it worse than most
- Hand washing, constantly and correctly. Not optional, and every pass lifts oil off the skin.
- Sanitizer solution. Quat or chlorine in a bucket you are in and out of all service.
- Heat and steam. Dry heat off a flat top, wet heat off a pot. Both strip.
- Acid and salt. Citrus, vinegar, brines, and dry salt in prep.
- Dish pit water. Hot, detergent-heavy, repeated.
Fitting it into service
You cannot wear balm during service, and you should not try. This is a between-shifts and end-of-night product. Heavy application after you break down, worked into the cuticles and the backs of the hands, is where the repair happens. During service, dry your hands properly instead of shaking them off, because evaporation is doing part of the damage.
Why tallow rather than a lotion
Beef tallow is built from largely the same fatty acids your own skin produces, so it absorbs and becomes part of the barrier instead of sitting on top of it as a film. Beeswax keeps it there through a hand wash. Most pump lotion is mostly water, which is why it feels good for twenty minutes and is gone by the next break.
The unscented version matters more here than in most trades: you are handling food, and you do not want fragrance on your hands. Raw has none in it.
On skin that is already split
Balm on an open crack stings and will not close it. Keep it clean, cover it while it closes, and use the balm on the skin around it and everywhere else so you stop making new ones. The goal is preventing the next crack, not treating today's. Anything hot, spreading, or refusing to close needs a doctor rather than a tin.
