Does Tallow Balm Smell Like Beef?

Properly rendered and filtered tallow does not. Badly rendered tallow absolutely does, and that is where the reputation comes from. If you have tried a tallow product that smelled like a roasting pan, you tried a poorly made one.

What makes tallow smell

Two things, and both are process rather than the fat itself.

Leftover meat and connective tissue. Rendering is the process of separating pure fat from everything else that came with it. Anything left behind is protein, and protein is what smells, both immediately and more so as it ages. Filtering is what removes it.

Overheating. Push the temperature too high and you brown the fat. Browning is delicious in a skillet and permanent in a balm.

Done at a low temperature and filtered properly, you get a clean, faintly waxy, almost neutral fat. Most people describe it as smelling like nothing in particular.

What mine smells like

The nine scented versions smell like their fragrance, and the tallow does not fight it or sit behind it. If you want to know honestly what the base smells like on its own, Raw is unscented, and it is the fair test. It is very faint, slightly waxy from the beeswax, a little sweet. It is not beef.

Worth noting that the unscented version is the one people with fragrance sensitivity buy, so it gets held to that standard by people paying close attention.

Does it smell on your skin afterwards?

No. It absorbs, and there is no lingering food smell as the day goes on. Tallow is close in composition to the fat your own skin produces, which is part of why it does not announce itself.

If a tin ever does smell off

Sharp, waxy, like old crayons or stale nuts, means the fats have oxidized and gone rancid. It is a slow process and it takes a long time in a properly made balm with vitamin E in it, but if a tin ever smells like that, throw it out. It will not hurt you, it will just be unpleasant. More on that in shelf life and storage.

Where mine comes from

A family farm in northern Indiana. Pasture raised and grain finished, which means it is not grass fed and I do not call it that. Rendered and filtered so it goes on clean.
